Not that you can’t eat pancakes any time you want, but Shove Tuesday, or Pancake Day as it’s maybe more commonly known, is the perfect excuse to whip up a batch or two.
These pancakes but they are actually so incredibly easy to make, and both delicious and filling. A great healthy alternative to the standard version of pancakes, I will happily be eating these for breakfast every weekend for the foreseeable future.
Makes 6-8 pancakes
0.5 cup of plant milk
0.75 cup of oats
0.5 tablespoon of chia seeds
1 teaspoon of cinnamon (optional)
Drizzle/spray of oil for the pan.
1 tablespoon of peanut butter
A drizzle of agave syrup
Combine all the ingredients in a food processor and blend until smooth.
Pour some of the mixture into a frying pan that’s at a medium heat.
Cook for a few minutes on either side and plate up your pancake.
Do the same with the rest of the mixture.
Stack them up and add your favourite toppings.
